Five Night Kitchen

Use what you have

Use dry red lentils for a pot, ragù or crisp fritters

Split red lentils soften readily, which is useful for a thick pot but needs more control in fritters. Pick a recipe designed for their texture rather than replacing whole green lentils without changing the method.

Measure the part you can use

The recipe quantities below are dry red lentils. Sort out debris, weigh the dry amount and rinse before cooking. Cooked lentils contain absorbed water and cannot be entered as an equal weight of dry stock.

Choose the texture you want

Soft lentil pot

Follow the pot’s liquid amount and simmering instructions, stirring as it thickens. Check tenderness, not just the clock; package type and age can change cooking behavior.

Ragù for pasta

Use the ragù recipe to cook lentils with mushrooms and tomato into a sauce. Keep enough moisture for the lentils to soften, then adjust the final sauce as directed before combining with pasta.

Pan-fried fritters

Follow the fritter recipe’s draining, cooling and binding steps. Wet, hot lentils are harder to shape. Make the specified small patties so the center and exterior cook together.

When the result is not quite right

A pot catching on the bottom needs lower heat and the recipe’s liquid adjustment. Fritters that spread need the correct drained mixture and shaping method, not a random increase in flour that changes the recipe.

Allocate your red lentils

Choose dinners in the list below. Stock is assigned in that order; any shortfall remains visible. This only totals red lentils, so check every full recipe for its other ingredients and method.

Open a complete week

The week opens with its own saved settings. Add your stock there to deduct it from the full shopping list.

Keep and prepare your stock

Keep dry lentils sealed in a dry place. Once cooked, use the selected recipe’s component window and storage plan. Food Hero describes several lentil types; our planner continues to use its own conservative cooked-food limits.

Avoid this mix-up

Do not substitute canned lentils for dry grams or assume all lentils hold their shape. Use a recipe written for the form you have.

Use the storage guide for prepared batches, and follow actual product labels. Our recipe and quantity checks are not a real cooking trial.
