Turn a mushroom pack into browned toppings or a tender sauce
The same pack can give a deeply browned polenta topping or a soft pasta sauce. The difference is pan space and when liquid is added, not an extra ingredient list.
Measure the part you can use
Use identified edible mushrooms from a reputable shop. Remove tough or damaged parts, clean near cooking time and weigh the edible raw pieces. The listed amounts are before cooking: mushrooms lose water, so a smaller cooked weight is expected.
Choose the texture you want
Browned polenta topping
Slice evenly and use a broad pan as the full recipe directs. Let released liquid evaporate before expecting browning. If the pan is crowded, use batches rather than continually raising the heat.
Pasta or ragù
Build the mushroom flavor before combining with the sauce. Keep the lentil and pasta liquid amounts from the chosen recipe; extra mushroom moisture does not replace all of that cooking liquid.
Gentle steamed dinner
Use the tofu and mushroom rice recipe for a softer result. This is a deliberate texture choice: the steaming step will not produce the browned surface of the polenta topping.
When the result is not quite right
Pale mushrooms sitting in liquid need evaporation and pan space. Do not add more oil merely because they look wet. If the pan starts to scorch before the mushrooms are tender, reduce the heat and follow the recipe’s next liquid addition.
Allocate your mushrooms
Choose dinners in the list below. Stock is assigned in that order; any shortfall remains visible. This only totals mushrooms, so check every full recipe for its other ingredients and method.
500g needed · 500g from stock · 0g shortfall · 0g unassigned
| Recipe | Need | From stock | Shortfall |
|---|---|---|---|
| Mushroom and pea pasta | 250g | 250g | 0g |
| Mushroom and pea risotto | 250g | 250g | 0g |
No dates, freshness assessment or prepared-batch credit are applied here. This worksheet stays separate from your saved week. Select usable food and schedule it within its actual storage limits.
The week opens with its own saved settings. Add your stock there to deduct it from the full shopping list.
Keep and prepare your stock
Keep mushrooms refrigerated and clean them near use. The Utah State guide recommends a breathable paper bag once opened. Follow actual packaging and discard spoiled mushrooms; this page does not identify wild mushrooms.
Avoid this mix-up
Do not use a volume of sliced mushrooms as an exact substitute for grams. Slice thickness and packing leave too much variation.
Use the storage guide for prepared batches, and follow actual product labels. Our recipe and quantity checks are not a real cooking trial.
